Carrot Cake Loaf

This is a recipe for a warm, moist carrot cake loaf that can easily be prepared for a nice autumn dessert. This pairs well with our hot chocolate recipe.

Special Equipment
Ingredients
2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 cup cooking oil + more for the pan
½ cup granulated sugar + more for the top
½ cup packed brown sugar
2 tsp vanilla extract
4 eggs
3 cups finely grated carrots
Directions
Step 1
Preheat the oven to 350°F (180°C). Then, oil a loaf pan and set aside.
Step 2
Mix the wet ingredients. In a large bowl, whisk the eggs, vanilla and cooking oil. Then add in the cinnamon, and the sugars.
Step 3
Pour the flour and baking soda into the wet mixture and fold it in until all of the flour has been incorporated. Then fold in the shredded carrots.
Step 4
Pour the batter into the loaf pan and sprinkle sugar on the top of the loaf to form a crunchy crust. Put in the oven and bake for 1 hour, or until a toothpick comes out clean.
Step 5
Allow to cool and serve.
