Peppermint Chocolate-Covered Digestive

Ingredients
12 Digestive biscuits
½ cup milk chocolate chips
¼ cup white chocolate chips
1 tsp coconut oil
1 peppermint candy cane
Directions
Step 1
Microwave the milk chocolate chips and ½ tsp of coconut oil in a microwave-safe bowl, warming in 30-second intervals, and stir every 30 seconds until the chocolate melts completely. Set aside. Repeat with the white chocolate chips until melted.
Step 2
Place a peppermint candy cane into a Ziploc bag. Using a rolling pin, crush the candy cane into small pieces.
Step 3
Line a baking tray with parchment paper. Then, dip a digestive biscuit into the milk chocolate and sprinkle the peppermint chunks all over it while it is still soft. Allow the chocolate to harden. Then, drizzle the white chocolate over the cookie. Set aside on the baking tray to cool fully. Repeat this with all the biscuits. If the cookies take a while to harden at room temperature, place them in the fridge to speed up the process. Enjoy!
