Snickerdoodle Cookies (Without Cream of Tartar)

Ingredients
Cookie Dough
1½ cups flour
½ tsp baking soda
1 tsp cinnamon
½ cup salted butter, softened
⅓ cup granulated sugar
⅓ cup brown sugar
1 egg
2 tsp vanilla extract
Coating
3 tbsp granulated sugar
½ tsp ground cinnamon
Instructions
Step 1
Preheat the oven to 375°F (190°C). Line two large cookie sheets with parchment paper. Set aside.
Step 2
Combine the granulated sugar and cinnamon in a small bowl. Set aside
Step 3
In a medium bowl, whisk the flour, baking soda, and cinnamon until well combined. Set aside. Then, in a large bowl, cream the butter and sugars together until they are light and fluffy. Add the egg and vanilla extract, beating until combined. Gradually add the dry mixture and fold with a rubber spatula with each addition.
Step 4
Roll cookie dough into small balls. Roll the dough balls in cinnamon-sugar topping and place them on the baking sheet. Space them evenly apart to allow for spreading. Bake the cookies for 10 minutes. Right when they are out of the oven, gently press down on them to help them flatten out. Allow cookies to cool completely. Serve and enjoy!
