Moist Lemon Cake

Ingredients

For the Cake

  1. 1 stick salted butter, softened

  2. ½ cups granulated sugar

  3. 2 large eggs

  4. 2 tbsp grated lemon zest 

  5. 1½ cups flour

  6. ¼ tsp baking powder

  7. ¼ tsp baking soda

  8. ¼ cup freshly squeezed lemon juice

  9. 6 tbsp milk

  10. ½ tsp vanilla extract


For the Icing

  1. 1 cup confectioners' sugar, sifted

  2. 2 tbsp freshly squeezed lemon juice


Directions

Step 1

Preheat the oven to 350°F (180°C). Grease and line a 9" circular cake pan with parchment paper. Set aside.


Step 2

Cream the butter sugar in a large bowl until light and fluffy. Then, incorporate the eggs,1 at a time, and the lemon zest.


Step 3

Sift together the flour, baking powder, baking soda, and salt in a medium bowl. In a separate medium bowl, combine the lemon juice, milk, and vanilla. Alternate between adding the dry ingredients and the wet ingredients into the creamed butter, folding with a spatula each time.


Step 4

Pour the batter into the greased cake pans, and bake for 35 to 50 minutes or until a toothpick comes out clean.


Step 5

Prepare the glaze: Combine the powdered sugar and the lemon juice in a bowl, mixing until smooth. Drizzle over the cake as desired.
